In the second of this series of videos about Champagne Pierre Gimonnet & Fils, Didier Gimonnet explains one of the key points of difference between his champagnes and most others: the way he stores and uses his reserve wines.
Reserve wines are used by all champagne makers to make their non-vintage champagnes. They are wines from previous harvests that have been stored, usually for an extra couple of years, so that they develop more depth and complexity. Then, when they are added to the wines produced from the current year’s harvest, they give a better quality blend and a more consistent taste.
